Organic Rice & Soy
Our objective is to preserve and develop rice and agricultural heritage. Being the fourth generation of rice farmers in the Delta Ebro, all of our rice is grown in the Delta Ebro Natural Park. And the organic soybeans that we sell and use for our miso are also local, with the majority used from France and Italy.
Types of rice
Rice is classified by its culinary characteristics, which depend mainly on the amount of starch and the type of starch it contains.
- Marisma – is a pearl rice, with the highest amount of starch. Perfect for cooking soupy rice or risotto due to its great capacity to absorb flavours. Furthermore, as it dissolves very well, it is ideal for fermenting sake, miso and amazake.
- Sushi: It is a crystalline rice, without pearl. Ideal for sushi and Asian recipes, as it is a rice with little absorption of flavors and that keeps the grain structure intact after cooking.
- Aromatic: It is a crystalline rice. Ideal for Asian recipes and salads, as it is a rice that provides an additional aroma to our dishes.
